Mushroom Recipes – Easy Ideas for When You Don’t Know What to Cook

Ok so mushrooms, right? Some ppl love em, some hate em. But if you’re in the love category like me, then wow – mushrooms are so good in sooo many dishes. They’re like this weird veg (well, not even really a veg, I think they’re a fungus? lol gross but also delicious) that can go with anything from pasta to curry to soup and even on toast.

So here I’m just gonna ramble through some easy mushroom recipes that I’ve made or tried or just like the sound of. And I’ll try not to make it boring like those food blogs that write their life story before giving you the recipe


1. Mushroom garlic toast (aka fancy toast)

Ok this one is SO easy and soooo good. All u need is:

  • bread (sourdough is fancy but whatever u have is fine)

  • mushrooms (button, cremini, whatever)

  • garlic

  • butter or olive oil

  • salt & pepper

  • maybe some herbs like thyme or parsley if u got em

Chop up mushrooms, sauté in butter or oil with garlic till soft and kinda golden. Put it on toasted bread and boom. Done.

If ur feeling extra, add cheese on top. Or a poached egg. Or both. Idk. It’s your life.


2. Mushroom pasta that doesn’t suck

Everyone thinks pasta = tomato sauce or alfredo but like… mushrooms can make a killer pasta.

what u need:

  • pasta (duh)

  • mushrooms (sliced)

  • garlic & onion

  • cream or milk or just pasta water if ur lazy

  • parm cheese

  • herbs if u got em (thyme works great)

Cook pasta. While that’s going, sauté mushrooms with onion & garlic in butter or oil. Add a splash of cream or reserved pasta water and let it thicken a bit. Toss pasta in, add cheese, done.

Optional: add spinach or peas if you wanna feel healthy.


3. Cream of mushroom soup (not the can kind ew)

Homemade mushroom soup is 100x better than the weird grey stuff from a can.

Ingredients:

  • mushrooms (a lot, like 2-3 cups)

  • onion

  • garlic

  • cream

  • broth (veg or chicken)

  • butter or oil

  • salt & pepper

Chop everything. Sauté onion & garlic, add mushrooms and cook till soft. Add broth, simmer, then blend (or not, chunky is fine too). Add cream at the end. Serve with crusty bread.

Some people add flour to thicken it but I never do. Up to u.


4. Mushroom fried rice

Super easy way to use leftover rice. Also kinda addictive ngl.

u need:

  • cooked rice (cold rice works best)

  • mushrooms, chopped

  • onion, garlic

  • soy sauce

  • sesame oil (if u have it, it makes a big diff)

  • egg (optional)

Fry mushrooms in a pan, add onions and garlic. Throw in rice, add soy sauce, and stir fry. Add scrambled egg if u want protein. Done in like 10 mins.

Tip: don’t add too much soy sauce or it turns soggy and sad


5. Stuffed mushrooms

Ok these look super fancy but honestly they’re so easy it’s dumb.

stuff u need:

  • big mushrooms (like portobello or big button ones)

  • cream cheese or grated cheese

  • garlic

  • breadcrumbs

  • herbs/spices (optional)

Pull out the stems, mix everything else in a bowl, stuff it in the mushrooms, and bake for 15-20 mins. Boom. Fancy snack or side dish. Some ppl put sausage or bacon in there too but I’m lazy.


6. Mushroom curry (yup it’s a thing)

Mushrooms in Indian curry is like… underrated. It’s not chicken tikka but still super good.

basic idea:

  • mushrooms

  • onion, garlic, ginger

  • tomatoes or tomato paste

  • curry powder or garam masala

  • cream or coconut milk (optional)

Fry onion garlic ginger, add tomatoes and spices, cook down, add mushrooms and simmer till soft. Add cream at end if u want it richer.

Eat with rice or naan or whatever u got.


7. Mushrooms on pizza

Not really a recipe but like. Just. Put mushrooms on your pizza. Please. Sauté them first so they don’t go soggy and make the crust sad. Add cheese, maybe some spinach or olives too. Yum.


8. Mushroom quesadillas (yes, really)

Cheese and mushrooms in a tortilla? Yes pls.

Sauté mushrooms with garlic or onions, put in tortilla with cheese, fold and toast on a pan. Dip in sour cream or salsa. Done in 5 mins.

Add jalapeños if u like spicy. Or spinach for a fake healthy vibe.


9. Mushroom omelette

Breakfast, lunch, dinner – omelettes don’t care.

Fry mushrooms, add eggs, fold, add cheese if u want. Done. Serve with toast or just eat it straight from the pan, no judgment.


10. Mushroom everything else

Seriously tho, mushrooms go with like… everything.

  • Add to stir fries

  • Put in ramen or noodle soup

  • Bake in a pie with cheese

  • Put in risotto if u can be bothered to stir forever

  • Roast them with garlic & olive oil and snack on them

They’re like the tofu of vegetables (even tho they’re not veg, idk what they are really lol) – they soak up flavor and just work in most dishes.


Tips for Cooking Mushrooms

  • Don’t wash them under water for too long – they soak it up like a sponge. Just wipe with a damp paper towel or rinse quick and dry.

  • Don’t overcrowd the pan – they steam instead of frying and turn slimy

  • Salt AFTER they brown – salt too early and they release water too fast

Also: mushrooms shrink a LOT so use more than you think you need.


Final Thoughts (idk why this sounds dramatic lol)

Mushrooms are weird but amazing. They look gross to some people (esp raw, eww) but once cooked they’re like soft little flavor bombs. Super good in simple meals or fancy stuff too.

Whether you’re broke and just have rice and garlic, or you’re trying to be all MasterChef and make soup from scratch, mushrooms got ur back.

So next time you don’t know what to cook and u got some mushrooms sitting in the fridge like “hey cook me” — try one of these ideas. No measuring, no fuss, just good food.

Unless ur allergic. Then uh… maybe don’t.
